Fava Bean & Lentil Stew with Sadaf Seasonings

 
 

Ingredients:

  • Sadaf Double Peeled Fava Beans – 1 can (or about 14 oz cooked)

  • Sadaf Green Lentils – 1 cup, rinsed and soaked for 30 minutes

  • Sadaf Mediterranean Blend Seasoning – 2 tsp

  • Sadaf Tomato Paste – 2 tbsp

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 1 large carrot, diced

  • 2 celery stalks, diced

  • 4 cups vegetable broth

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • Fresh parsley, chopped (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onions, garlic, carrots, and celery. Sauté for 5-7 minutes until softened.

  2. Add the Sadaf Tomato Paste and cook for another 2-3 minutes, allowing the tomato paste to caramelize slightly for depth of flavor.

  3. Stir in the Sadaf Green Lentils, broth, and Sadaf Mediterranean Blend Seasoning. Bring to a boil, then reduce to a simmer and cook for 20 minutes.

  4. After the lentils are tender, add the Sadaf Double Peeled Fava Beans and continue cooking for another 10 minutes, allowing the flavors to meld together.

  5. Adjust seasoning with salt and pepper to taste.

  6. Garnish with fresh parsley and serve with warm crusty bread or over rice for a heartier meal.
