Italian Style Pork Chops

Pork chops with an Italian twist that are both tasty and tender. Excellent when paired with pasta.

Ingredients

1 teaspoon extra virgin olive oil

2 cups mushrooms, sliced

2 tablespoons extra virgin olive oil

6 pork loin chops (3/4 inch thick)

2 garlic cloves, minced

1 cup onion, chopped

1 (14.5 oz) undrained can, diced Italian tomatoes

1 teaspoon basil (dried)

1/2 teaspoon oregano, dry

1/4 teaspoon crushed black pepper

1/2 teaspoon salt

1 big green bell pepper, sliced into 6 pieces

1/2 cup water, if needed

Directions

First:

In a pan, heat 1 teaspoon olive oil over medium heat. Cook and stir until the mushrooms are soft, about 5 to 7 minutes. Put the mushrooms in a dish and set them aside.

Second:

Brown the pork chops on each side for 7 to 10 minutes. Drain all but 1 tablespoon of drippings from the skillet and place the pork chops on a platter. Stir in the garlic and onion, and simmer and stir for 5 minutes, or until the onion has softened and gone translucent.

Third:

Season with basil, oregano, salt, and pepper after adding the tomatoes. Return the pork chops to the skillet; cover and cook for 45 minutes, or until the pork chops are cooked and no longer pink in the middle. If the mixture becomes too dry, add additional water. Place the bell pepper on top of the pork, followed by the mushrooms that were set aside. Continue to cook for another 5 to 10 minutes, or until the bell pepper is soft.

Cooking tip: If you add the green pepper wedges before the chops are done, they'll turn to mush, wait to add them until the pork chops are fully cooked.
